Chocolate galore!
With the Easter holidays fast approaching these Malteaser chocolate cupcakes are perfect for any afternoon tea or family gathering. The rich, soft sponge, paired with the crunch of the pieces of Malteaser dispersed throughout make for a delicious treat not to be missed.
Malteaser Chocolate Cupcakes
Prep time: 15-20 minutes
Cooking time: 12-15 minutes
Serves: 6 cupcakes
Ingredients:
For the cakes
- 150g butter or margarine
- 150g caster sugar
- 3 free range eggs
- 100g self-raising flour
- 50g cocoa powder
- Crushed malteasers
For the icing
- 100g butter
- 200g icing sugar
- 1-2 tsp milk
- 50g milk chocolate
- Malteasers to decorate
Method
Firstly, preheat the oven to 200 degrees Celsius and line a
cupcake tray with cases.
Place the butter and sugar into a bowl or mixer and mix
until they are of a creamy consistency.
Next add the eggs, one at a time, making sure to mix well between each addition. Add the crushed malteasers and stir.
Finally, sift in the flour and cocoa powder, ensuring to fold them in to prevent knocking out the air that was incorporated earlier.

Place the mixture into the prepared cases until they are 2/3
of the way full, and place on the middle shelf of the oven for 12-15 minutes,
or until springy to the touch.
Once cooked all the way through, place the cakes onto a wire
cooling rack.
Meanwhile, to make the icing place the softened butter and
sifted icing sugar into a bowl and mix until you reach a smooth pipeable
consistency. If the icing is too thick you can add a small amount of milk to
loosen it. Finally, melt the chocolate and pour into the icing, stirring well.
Prepare an icing bag with your chosen nozzle and fill with
the buttercream. Pipe onto the top of the cakes in your desired pattern (I used
a Wilton 2D nozzle). Finally, decorate the cakes with two malteasers, and you
could even add a drizzle of chocolate or a dusting of icing sugar.
