A party favourite


As Christmas is getting nearer and nearer party food is on everyone's minds, and what better sweet party snack than the colourful party rings. 
These light vanilla cupcakes, filled with strawberry jam, and topped with smooth buttercream and a drizzle of icing are a great addition to the crunchy biscuits. 

Party ring cupcakes

Prep time: 30 minutes
Cooking time: 12-15 minutes 
Serves: 6 cupcakes 


Ingredients: 

For the cakes: 

  • 100g softened butter 
  • 100g caster sugar 
  • 2 free range eggs 
  • 1 tsp vanilla extract
  • 100g self raising flour 

For the buttercream: 
  • 100g softened butter 
  • 200g icing sugar 
  • 1-2tsp milk (if needed) 
  • Gel food colouring 
For the royal icing: 
  • 50g icing sugar 
  • 1-2tsp water/milk 
Extras: 
  • Strawberry jam to fill
  • Party rings to top 

Method: 

First, preheat the oven to 200 degrees Celsius, and line a cupcake tray with 6 cupcake cases. 

Place the softened butter and sugar into a bowl and mix until they are of a creamy consistency. 

Next, add the eggs one at a time, and mix thoroughly between each addition to incorporate as much air as possible. 

Finally, sift in the flour, and add the vanilla extract, and gently fold the mixture in a figure of eight action until all the ingredients are combined. 

Spoon the cake batter into the prepared cases until they are two thirds full, and place into the oven for 12-15 minutes, or until golden brown and springy to touch. 

Meanwhile, place the softened butter and sifted icing sugar into a bowl and mix until of a creamy, smooth consistency. If needed add a small amount of milk until the icing is of a piping consistency. Finally, add the food colouring. If you are using gel you should only need a tiny amount to get a vibrant colour. 

Once the cakes are done place them onto a wire cooling rack to cool completely before piping the icing. 

Whilst the cakes are cooling, prepare a icing bag with your desired nozzle (I used a Wilton 2D), and fill the piping bag with your icing. 

In another bowl place the sifted icing sugar and milk/water, and mix until you reach a thick but pipable royal icing, that leaves a trail when to spoon is lifted  out of the bowl. 

Once the cakes are cool core the middle of each cake and fill with a small amount of strawberry jam, and place the 'lid' back on top. 

Using your prepared piping bag pipe your icing onto the cakes. I started from the middle and made my way outwards in a circular action. Finally, drizzle the royal icing on top of the cake and place a party ring (or two) on top.
