Sparkling Bonfire Night treats


As it is bonfire night I thought what better day than to make bonfire themed cupcakes for everyone to enjoy, inspired by an image I saw on Pinterest. It is finally the start of my favourite time of year and what better way to cosy up in the warm than with one of these delicious Chocolate Nutella cupcakes. 


Nutella bonfire cupcakes 

Prep time: 20 minutes 
Cooking time: 15 minutes 
Serves: 15 cupcakes 

Ingredients: 

For the cakes
  • 200g softened butter 
  • 200g caster sugar 
  • 4 free range eggs 
  • 160g self raising flour 
  • 50g Nutella 
  • 50g cocoa powder 

For the icing: 
  • 150g softened butter 
  • 300g icing sugar 
  • 1-2tbsp milk 
  • Orange food colouring 
Decorations: 
  • Chocolate matchmakers
  • mini marshmallows 
  • Cocktail sticks 

Method: 

Preheat the oven to 200 degrees Celsius, and line a cupcake tray (or two) with 15 cupcake cases. 

Place the softened butter/margarine into a bowl with the caster sugar and mix together until of a creamy consistency. 

Next add the eggs, one at a time, making sure to thoroughly mix between each addition. Once the eggs are fully incorporated, add the Nutella into the mixture and stir well. 

Finally, sift the flour and cocoa powder into the batter and slowly fold them into the mixture in a figure of eight action. 

Spoon the cake mixture into the cupcake cases until they are each two thirds full. Place in the oven for 12-15 minutes until cooked all the way through and springy to the touch. 

Leave the cakes to cool on a wire cooling rack. 

Meanwhile, place the softened butter into a bowl, with the sifted icing sugar and slowly combine the two. You may need to add a small amount of milk to the mixture to make it easier to mix and pipe. Once the buttercream is smooth add a few drops of the food colouring until it is of a colour you are happy with. I used about 3 drops of liquid food colouring (I'd normally opt for gel food colouring as this gives a better colour but my uni budget doesn't cover this at the moment!) 

Prepare a piping bag with your nozzle of choice (I used my Wilton 2D, as usual) and place the buttercream into the icing bag. Pipe from the outside inwards, slowly moving up in a circular action. 

Finally, break the matchmakers into two and place around the edge of the icing. Then place two mini marshmallows onto the end of a cocktail stick and place on top of the cakes.
