An Autumn warmer


I've come to realise that living in a student house comes with the disadvantage of having a very unpredictable, rubbish oven, which unfortunately means that I can't do as much baking as I like, so these posts may be a little more infrequent as I like. However, every opportunity I have when home will be spent baking so I can post as much as possible. 

This weekend I spent trying out a few recipes, and trying to figure out my oven however, one did turn out quite well. I was given a recipe by a work colleague last week, and I thought why not try and recreate this with my own spin. 
This delicious raspberry and chocolate loaf cake is perfect for these dreary winter days, and adds a bit of summer which feels like a distant memory now! The rich chocolate paired with the bursts of sour raspberry is the perfect combination. 

Chocolate and Raspberry loaf cake

Prep time: 15 mins
Cooking time: 25-35 mins
Serves: 10 people 


Ingredients: 


  • 150g margarine/butter 
  • 150g sugar 
  • 3 free range eggs 
  • 120g self raising flour 
  • 30g cocoa powder 
  • 200g milk chocolate (50g melted, 50g chopped into small chunks) 
  • 1 punnet of raspberries (I saved a few for decoration on the top)
  • 1 tbsp Nutella (decoration) 
  • 1 tbsp Raspberry jam (decoration)  

Method: 

Preheat the oven to 180 degrees Celsius, and line a loaf tin with baking paper. 

Place the butter/margarine into a bowl with the sugar and mix until combined and of a creamy consistency. 

Next add the eggs, one at a time, mixing well in between each addition. 

Once the eggs have been thoroughly combined, and as much air as possible has been incorporated, add the melted and chopped chocolate. 

Finally, sift in the flour and cocoa powder, and gently fold into the mixture until it is smooth. 

Pour the cake mix into the loaf tin, and bake for 25-35 minutes. 

Once baked all the way through leave to cool in the tin. Melt the Nutella, and Raspberry jam in the microwave, and decorate the surface of the loaf. 

Ta Dah! There it is, a super simple, but delicious chocolate and raspberry loaf cake, perfect with a cup of tea, or warmed in the evening as a pudding. Happy baking!
