Afternoon tea
On a recent trip home I made the most of having a good oven, and all the baking equipment you could ever think of, and made some of my mums traditional scones, perfect for any afternoon with a cup of tea.
Helen's traditional Scones:
Prep time: 20 minutesCooking time: 8-10 minutes
Serves: 6 large scones
Ingredients:
- 50g Softened butter or margarine
- 200g self raising flour
- 1 tsp baking powder
- 25-50g caster sugar (optional)
- 100mls Milk
- 50g Sultanas (optional)
- 1 free range egg (optional, I don't normally use an egg)
Method:
Firstly, preheat the oven to 230(conventional)/200 (fan) degrees celsius, and line a baking tray with greaseproof paper.
Place the flour, butter and sugar into a bowl and crumb together with your fingers, until a breadcrumb like mixture is reached. Next add the sultanas.
Then create a well in the middle of the mixture and gradually add the milk until a dough is formed.
Lightly dust the surface with flour, and knead the dough for a minute or two until it becomes smooth. Then roll out the dough very slightly, until it is about one inch in thickness.
Using a round cutter, cut the dough and place each scone onto the baking tray. You may need to re-roll the dough a few times.
Finally, lightly brush the scones with a small amount of milk or egg to make the tops shiny.
Place the scones into the oven for 8-10 minutes, or until golden brown on top.
Serve with jam and cream, or any alternative topping of your choice!
