Cinnamon apple tarts




This week I thought I would divert away from cakes (Shocker!), and try out a new, but super easy puff pastry recipe. 
A lot of people claim that pasty is a very hard skill to master but in fact once you know the rules its actually very easy! These simple but delicious apple tarts are super quick to prepare, and will no doubt wow your guests at any dinner party...or even as a mid week treat for yourself. The crisp, and flaky pastry, paired with the soft apple and the crunch of the cinnamon sugar is a match made in heaven. 


Cinnamon Apple Tarts 

Prep time: 1 hour 
Cooking time: 25 minutes 
Serves: 3 tarts

Ingredients: 

For the rough puff pastry: 
  • 125g plain flour 
  • 125g butter (at room temp) 
  • 75ml cold water 
  • pinch of salt 
  • 1tsp sugar 
Extras: 
  • 1 free range egg
  • One Pink Lady apple 
  • Cinnamon sugar (1 tbsp sugar, 1 tsp cinnamon) 

Method: 

Firstly, place the flour, salt and sugar into a bowl and mix together. 
Add the softened butter to the dry ingredients, and roughly crumb together using your fingers. Make sure you do not create a fine breadcrumb texture, you want to be able to see bits of butter within the flour still. 
Make a well in the middle of the flour and butter mixture. Pour two thirds of the cold water into the middle, and mix in with the other ingredients to create a rough dough. 
*If it doesn't come together fully add the last third of water. However, your dough shouldn't be too sticky. 

Place into the fridge for 20 minutes to cool. The key to pastry is keeping it at a cool temperature. 
Once the twenty minutes is up place the pastry onto a lightly floured surface and briefly kneed till the dough is smooth. Using a rolling pin roll the pastry into a rectangle, about 30cm long and 10cm wide. 
Fold the top third of the rectangle into the middle of the pastry, and then the bottom third over the top, to create a square parcel. Seal at both ends by pressing the rolling pin down on the pastry. Place in the fridge, wrapped in cling film and rest for another 20 minutes. 

Repeat this step at least twice more, doing two folds each time to create as many layers as you can. 

Preheat the oven to 200 degrees Celsius, and prepare a baking tray with baking parchment.  

Once this is done you can roll out the pasty to the desired shapes for your Cinnamon Apple tarts. I chose rectangles, roughly 20cm in length and 5cm in width. 

Whisk one egg, and using a pastry brush glaze the pastry with the egg. This will create a glossy appearance. 
Thinly slice the apple, and cut to size so that there is roughly a 0.5cm edge to the pastry, to allow it to rise around the filling. Glaze the apple with the egg wash. 
Combine the sugar, and cinnamon and lightly dust the tarts with the cinnamon sugar. 

You could also make an apple puree and place this under the sliced apple to create a stronger flavor. 

To decorate, create a crimp around the edge of the pastry using a fork. 

Place into the oven for 25 minutes, or until of a golden brown colour, and completely cooked on the bottom.
