Malteaser Christmas Pudding cake
As the festive season is finally in full swing, and Christmas is quickly approaching I thought it would be the perfect opportunity to share my Malteaser Christmas pudding cake recipe. These cakes were a massive trend last Christmas, but there's so much you can do with them, to make them your own unique show stopper.
Malteaser Christmas Pudding Cake
Prep time: 30 minutes
Cooking time: 25-30 minutes
Serves: 12 people
Firstly, preheat the oven to 180 degrees Celsius, and grease a half sphere cake tin well with butter.
Place the softened butter, and caster sugar into a bowl and cream together until smooth and of a creamy consistency.
Add the eggs to the mixture one at a time, making sure to mix well between each addition to prevent it from curdling and to incorporate enough air.
Finally, sift the flour and cocoa powder into the wet ingredients and gently fold them in with a metal spoon, being careful not to knock too much air out.
Place the mixture into the prepared tin and place on the middle shelf of the oven to cook for 25-30 minutes, or until springy to the touch. Once cooked all the way through, leave on a wire cooling rack to cool completely.
To make the buttercream place the softened butter and sifted icing sugar into a bowl and mix together until smooth. Melt the milk chocolate in the microwave and then place Add a teaspoon of milk if needed to soften the buttercream until it is of a spreadable consistency.
Once the cake is cooled cut into two and spread a tablespoon of buttercream onto the middle, and place your chopped raspberries on top.
Next, using a palette knife spread two tablespoons of buttercream around the outside of the cake, until it is covered by a thin layer.
Finally, place your minstrels on top of the buttercream, making sure they are close together so that the buttercream cannot be seen.
Mix together icing sugar and a small amount of water until of a thick dripping consistency. Either using a plain piping bag, or a teaspoon carefully spread the royal icing on top of the cake. Finally, top with two raspberries.

- 1 tsp milk

- Optional chopped raspberries to add to the filling
