Lemon drizzle Loaf Cake


After a trip home last week I thought i'd take it back to basics and share my classic Lemon loaf cake recipe. This is one of my brothers favourite cakes, so every time I go home from uni I'm sure to bake him one of these to enjoy....and earn sister brownie points (haha). 

Lemon Loaf Cake 

Prep time: 30 minutes
Cooking time: 25-30 minutes
Serves: 10 people

Ingredients: 

Lemon loaf:

  • 200g softened butter 
  • 200g caster sugar 
  • 200g self raising flour 
  • 4 free range eggs 
  • Zest of two lemons 
  • Juice of one lemon 
Drizzle Icing and glaze: 
  • Juice of one and a half lemons
  • 50g caster sugar 
  • 50g icing sugar 

Method: 

Firstly, preheat the oven to 180 degrees Celsius, and line a loaf tin with baking paper. 
Place the sugar and softened butter into a bowl and cream together until they are fully combined, and of a smooth creamy consistency. 
Add the eggs one at a time, mixing well between each addition to ensure that enough air is incorporated. Add the lemon juice and stir thoroughly. 
Finally, sift in the self raising flour and add the lemon zest. Carefully fold the mixture with a metal spoon until the flour is completely combined into the other ingredients
Place the mixture into the pre prepared tin and bake in the oven for 25 to 30 minutes, or until golden brown and springy to the touch. 

Just before the cake is done, place 50g of caster sugar and the juice of one lemon into a pan and simmer until the sugar is fully dissolved. 
Once the cake is out of the oven let it cool slightly for a few minutes. Then using a skewer or cake tester place small holes into the top of the cake, making sure to go down to the bottom. Now using a pastry brush, brush the lemon glaze onto the top of the cake making sure to reach every edge. 
Leave the glaze to soak in and for the cake to cool. 

To make the icing sift the icing sugar into a bowl and add small amounts of lemon juice until it is thick enough to pipe. 
Place the cake onto a plate. Finally, fill a plain piping bag with the lemon icing, and pipe across the top of the cake.
