Double chocolate cookies
With The Great British Bake Off gracing our screens once again next week (yay) I thought I would take it back to basics with my double chocolate cookies, which are defiantly a favourite between family and friends. These crunchy on the outside, but soft on the inside cookies are bound to delight all biscuit and chocolate lovers alike. What's even better about these is that they are super easy to make and are ready to eat in 15 minutes, what more could you want!
Double Chocolate cookies
Preparation time: 5 minutesCooking time: 8-10 minutes
Serves: 16
Ingredients:
- 125g butter
- 100g light brown soft sugar
- 125g caster sugar
- 1 egg
- 225g self raising flour
- 100g white chocolate
- 100g milk chocolate
Method:
Firstly, preheat the oven to 180 degrees Celsius or gas mark four and grease two baking trays.Cream the butter and sugars together until fully combined. Then add the egg and thoroughly mix in.
Next sift in the flour and add the chopped chocolate. Mix until evenly distributed
Using your hands make the mixture into small balls, about the size of a ping pong or golf ball.
Place the dough onto the baking trays and place in the oven for 8-10 minutes.
*Ensure that you keep an eye on the cookies throughout their cooking time because they can burn very easily.
Once golden brown take the cookies out of the oven and leave on the baking tray to harden/set for 5-10 minutes.
And there you have it! My super easy cookie recipe, which are perfect for snacking, or a cheeky treat with a cup of tea.
