Peanut butter cup cupcakes
My family are huge lovers of peanut butter, and what better way to satisfy everyone's cravings than a rich, indulgent chocolate peanut butter cupcake topped with Reese's peanut butter cups!
This recipe was a bit of a trial run but I was so pleased with the results I thought why not share it.
Peanut butter cupcakes
Prep time: 15 minutes
Cook time: 12 minutes
Serves: 9 Cupcakes
Ingredients:
For the cupcakes:
- 150g softened butter
- 150g caster sugar
- 130g self raising flour
- 20g cocoa powder
- 3 eggs
- 1 tbsp peanut butter (smooth or crunchy)
Peanut buttercream:
- 100g butter
- 200g icing sugar
- 1 tbsp peanut butter
- 1tsp milk
Method:
For this recipe I used a basic cupcake method, just with the addition of a few extra ingredients.
Preheat the oven to 200 degrees Celsius or gas mark 6, and line a cupcake tray with cupcake cases of your choice.
Cream together the sugar and softened butter until fully combined and smooth, mixing well to incorporate enough air.
Add the eggs one at a time, whisking well between each addition to create as much air as possible to achieve light fluffy cupcakes.
Next add the peanut butter. Depending on how rich you would like the cakes to be this amount could vary between 1/2 tbsp to 2tbsp.
Finally, sift the flour and cocoa powder into the mixture and gently fold in until all ingredients are incorporated.
Using an ice cream scoop (or a spoon) carefully place the mixture into the cupcake cases until they are about 2/3 full.
Place into the oven for 12 minutes or until springy to the touch.
Leave to cool on a wire rack.
For the buttercream place the softened butter and the peanut butter into a bowl and mix together until smooth.
Sift in the icing sugar mix thoroughly until combined. Add about a teaspoon of milk if needed to create a soft buttercream that is easy to pipe.
Once the cakes are cooled place the buttercream into a piping bag. For this style of icing I used a seven point star tip (Wilton 2D) however, a plain nozzle could also be used. Yo could get very creative with the piping of the buttercream and use lots of different nozzles to create a different effect!
Slowly pipe the buttercream onto the surface of the cakes starting in the middle and working your way outwards, and then upwards.
Cut some Reese's peanut butter cups in half and place them diagonally onto the icing. Alternatively, you could place chopped peanuts, mini peanut butter cups or chopped up pieces of a Reese's peanut chocolate bar onto the icing.
